Gita Ramesh has dedicated her life to a goal: l would like to make the 5000 year old medical science of Ayurveda even more popular. The family members are fourth generation Ayurvedic practitioners. Mrs. Ramesh, head chef of the multi-award winning resort, loves Ayurvedic cuisine passionately and has written down her aroma knowledge in a cookbook. What’s more, she has also scientifically earned her fascination for this culinary art and acquired a master’s degree in biochemistry. In India, she is considered one of the leading women in the field of Ayurveda.

The village of interest, which she created with her husband, is an oasis of naturalness. The basics of every Ayurveda cure grow in the hotel’s herb and vegetable garden. The traditional charm of the complex, exceptionally charming at the mountain pass between Kerala and Tamil Nadu, conjures up. Avial with yoghurt cream

Chef Ramesh’s variation of the classic Avial with long-haired is a welcome change

Ingredients

10 snap beans or five broad beans

1 cooking banana

1 carving of pumpkin (about 100 gm) as desired

1 carrot

100 g peas

2 cm fresh lner root

2 fresh, green chillies

200 g unspiked grated coconut

1/2 teaspoon crossbeam seed

2 tablespoons yogurt

salt

20 curry leaves

1 tsp coconut

Preparation:

1. Clean the beans, remove them, divide the broad beans into pieces of about 3 cm. Peel banana, halve slowly, roughly dice. Peel pumpkin if necessary, chop it roughly. Peel the carrot, chop it roughly. Pulp peas if necessary.
2. Cover the vegetables in a pot with a little water, bring to the boil, simmer for about 10 minutes.
3. Peel the ginger, finely chop, chill the halves slowly, remove the seeds for less spice, grate with grated coconut, cheesecloth seeds and yoghurt with the purier stick, season with salt.
4. Warm coconut oil, let curry leaves in it. Drain Germuse well, stir in yoghurt paste, garnish with coconut oil and curry leaves. This fits rice.”
